Apple and Granola Crumble
(makes 6 servings)

Ingredients: Nutrition Facts for Apple and Granola Crumble (text version below directions)
small bullet 1-1/2 cups apple cider
small bullet 1/4 cup dried apricots, coarsely chopped
small bullet 1/4 cup dried cranberries
small bullet 1/2 cup plain granola*
small bullet 1/2 cup packed brown sugar, divided
small bullet 5 tablespoons all-purpose flour, divided
small bullet 1 teaspoon ground nutmeg, divided
small bullet 3 tablespoons honey
small bullet 1 teaspoon vanilla extract
small bullet 5 medium apples, peeled, cored and cut into 8 wedges each
small bullet Nonfat cooking spray
*You can make your own granola besides store-bought...Skillet Granola.

Directions:
1. Preheat oven to 350º.
2. Add cider to a medium saucepan then bring to boiling. Remove from heat then stir in apricots and cranberries then let stand for 15-20 minutes. Drain fruit in a sieve or colander over a bowl and reserve cider then set aside.
3. Prepare topping: In a small bowl, combine dried fruit, granola, 1/4 cup of the brown sugar, 1 tablespoon of the flour and 1/2 teaspoon of the nutmeg.
4. Prepare filling: In a large bowl, add remaining sugar, flour and nutmeg. Gradually add in reserved cider, honey and vanilla and stir to combine. Add apple wedges and lightly toss until coated.
5. Spray an 11 x 17 baking dish with nonfat cooking spray. Add apples then sprinkle with granola topping. Bake at 350º for 1 hour then serve.
