1-1/2 cups apple cider |
 |
1/4 cup dried apricots, coarsely chopped |
 |
1/4 cup dried cranberries |
 |
1/2 cup plain granola* |
 |
1/2 cup packed brown sugar, divided |
 |
5 tablespoons all-purpose flour, divided |
 |
1 teaspoon ground nutmeg, divided |
 |
3 tablespoons honey |
 |
1 teaspoon vanilla extract |
 |
5 medium apples, peeled, cored and cut into 8 wedges each |

Nonfat cooking spray |
*You can make your own granola besides store-bought...Skillet Granola.

Preheat oven to 350º. |

Add cider to a medium saucepan then bring to boiling. Remove from heat then stir in apricots and cranberries then let stand for 15-20 minutes. Drain fruit in a sieve or colander over a bowl and reserve cider then set aside. |

Prepare topping: In a small bowl, combine dried fruit, granola, 1/4 cup of the brown sugar, 1 tablespoon of the flour and 1/2 teaspoon of the nutmeg. |

Prepare filling: In a large bowl, add remaining sugar, flour and nutmeg. Gradually add in reserved cider, honey and vanilla and stir to combine. Add apple wedges and lightly toss until coated. |

Spray an 11 x 17 baking dish with nonfat cooking spray. Add apples then sprinkle with granola topping. Bake at 350º for 1 hour then serve. |
